Ingredients & Measurements

Serves 4

16 oz Rotisserie Chicken or chicken breast

8 oz grape tomatoes

8 oz Fresh Mozzarella Cheese

2 tbsp Pesto

1 cup Mayonnaise

1/2 cup fresh shredded Parmesan Cheese

6 slices Bacon

Serve With:

4 Cups Spinach

12 Broccoli Spears

4 Tbsp Olive Oil

1 Tbsp minced garlic

How To Make This Keto Recipe: Step-By-Step Guide

Step 1: Preheat the oven to 400 degrees F.

Step 2: Cut the chicken into bite-size pieces or shred. Set aside.

Step 3: Cook bacon until crispy. Set aside to cool. Then chop into small pieces.

Step 4: Slice tomatoes into quarters.

Step 5: In a 9×9 baking dish, add chicken, mozzarella cheeses, pesto, mayonnaise, and bacon. Mix and spread evenly in a pan.

Step 6: Toss the broccoli spears, olive oil, and garlic together in a separate baking dish. Set aside.

Step 7: Top the pan off with the shredded parmesan cheese and bake for 15 minutes.

Step 8: At the 15-minute mark, place broccoli in the second dish into the oven. Cook both dishes for 10 minutes until the chicken mixture is bubbly and golden brown.

Step 9: Let sit for 5 minutes. Serve with broccoli atop the spinach.
